What is Collagen Casing?
Collagen is a naturally occurring, long, fibrous protein used for many years as a raw material in the food and casing industry. Collagen sausage casing is manufactured by breaking collagen fibre down into a solution and extruding it into tubes of uniform thickness and diameter, giving a strong, consistent membrane that is either edible or non-edible depending on the application. Sripath Foods supplies both categories in India through ViskoTeepak's Nippi (edible) and Fibran (non-edible) collagen ranges.
Types of Collagen Casing We Offer
Nippi Edible Collagen (for fresh, smoked & cooked sausages):
- R-type — multi-purpose casing for processed, smoked, semi-dried and dried sausage; extra-strong membrane for high-speed stuffing, tender bite after cooking.
- K-type & CK-type — alternative bite characteristics to R-type, used for snack sticks, Chinese sausages and cupping pepperoni (available up to 38mm diameter).
- F-type — designed for fresh sausage cooked by deep-frying, grilling or pan-frying; low shrinkage and minimal breakage during linking.
- NF — for fully cooked fresh/frozen links such as breakfast sausage, andouille and chorizo; smooth, effective production process.
Fibran Non-Edible Collagen (for cured, smoked & cooked sausages):
- S1 — straight and round casing, Γ19–140mm, for smoked/cooked sausages and salami-type products.
- NF — high-permeability casing for cooked sausages and cured products requiring prolonged cooking (salami, cured Iberian loin, fuet).
- TER (Tender Edible Round) — tender, natural-casing substitute for fresh, cooked and smoked Frankfurt-type sausages.
- SET (Straight Edible Tender) — for large-caliber (38mm+) smoked and cooked sausages, no peeling required.
