It is also the category where casing selection most often goes wrong.
The reason is technical. A chicken emulsion is not a pork emulsion. It carries more added water, less fat, and a weaker protein gel. Run it in a casing chosen for pork and you get the three complaints that dominate poultry lines: jelly and water pockets under the casing, wrinkling after chilling, and yield loss at cook. None of these are recipe faults alone — in most plants they are casing specification faults.

Why Chicken Emulsion Behaves Differently
Before choosing a casing, it helps to be clear about what the casing has to hold.
- Higher added water. Chicken sausage formulations typically carry more added water and ice than red meat equivalents, so there is more free moisture available to migrate to the casing wall during cooking and chilling.
- Lower and softer fat. Poultry fat is softer and melts at a lower temperature than pork back fat, which increases the risk of fat separation if the emulsion is overworked or over-cooked.
- Weaker protein gel. Chicken myofibrillar protein forms a less rigid gel than pork, so the product relies more on the casing to hold shape and diameter.
- Pale colour. Chicken emulsion is naturally grey-pink and looks washed out next to pork or beef products, which puts more of the visual burden on the casing.

The Four Casing Families and Where Chicken Fits
There are four engineered casing families in commercial use. Each one owns a specific set of chicken products.

Collagen casing for fresh chicken sausage
Edible collagen casing is the default for retail chicken sausage links, whether sold chilled or frozen. It is extruded from purified beef or pork hide collagen to a controlled caliber, which is exactly what a high-speed linker needs.
- Uniform caliber. Every metre of casing is the same diameter, so pack weight is consistent and give-away drops.
- Line speed. Collagen runs on automatic linkers at speeds natural casing cannot match, with far fewer breaks.
- Tender bite. The casing is eaten with the product and should disappear in the bite — critical for chicken, where consumers expect a soft product.
- Supply consistency. Unlike natural casing, supply and specification do not vary with livestock availability.
For chicken, specify a collagen grade suited to high-moisture emulsion. A casing that is too strong for a soft chicken batter gives a rubbery bite; too weak, and you get blowouts on the linker.
Cellulose casing for skinless chicken frankfurters
Skinless chicken hot dogs and frankfurters are made in cellulose casing — commonly referred to by the Wienie-Pak name. The product is stuffed, cooked and smoked inside the casing, which is then peeled away completely before packing.
The casing is doing three jobs in that process: it fixes the diameter precisely, it carries smoke and heat into the product, and it releases cleanly at peeling without tearing the surface. For QSR and institutional buyers who specify frank diameter and count-per-kilo tightly, cellulose is the only practical route.
Colour-transfer cellulose casings are also available, which impart a surface colour to the frank during cooking. On pale chicken emulsion this is one of the fastest and cheapest appearance fixes available.
Fibrous casing for chicken salami and pepperoni
Chicken salami is a large-caliber, sliced product, and it needs a casing with tensile strength, dimensional stability and smoke permeability. That is fibrous casing — a paper-reinforced viscose casing.
- Strength. It withstands high-pressure stuffing at large calibers without bursting.
- Caliber consistency. Slice diameter stays uniform down the stick, which matters when the customer is buying by slice count.
- Permeability. Smoke and moisture pass through, so cooked, smoked and fermented chicken products can all be made in it.
- Colour and print. Mahogany and other coloured fibrous casings give pale chicken salami the visual depth buyers expect, and printed casing carries your brand through to the deli counter.
Meat adhesion is the specification to watch here. A chicken salami in a low-adhesion fibrous casing will separate from the wall as it cools, leaving a gap and a wrinkled surface.

Plastic casing for chicken ham, rolls and mortadella
Engineered plastic casing is a multi-layer co-extruded barrier casing. It is impermeable to moisture and oxygen, which makes it the highest-yield casing available — and that matters most precisely where chicken products sit, because a high-added-water emulsion has the most moisture to lose.
- Chicken ham and poultry rolls. Molded and D-shaped products run in the Nova Shape Series, engineered for shaped production with controlled shrink and high print quality.
- Chicken mortadella and bologna. Round large-caliber products run in the Core Series.

Shrink and Meat Adhesion: The Two Specs That Decide Your Result
Most casing problems on poultry lines trace back to one of these two numbers. Both are ordered specifications — you choose them when you place the order, and changing them is usually cheaper and faster than reformulating.
Shrink
Shrink is the percentage by which the casing contracts as the product cools. Its job is to stay tight against a product that is itself contracting. If casing shrink is lower than product contraction, the casing goes slack and the surface wrinkles.
Chicken products lose more volume on chilling than red meat products because of their moisture content, so they generally need a higher shrink casing than the equivalent pork item. Poultry products commonly run well in the 10–15% shrink range, but this must be confirmed against your own recipe, stuffing pressure and cooling profile — which is exactly what a line trial is for.
Meat adhesion
Meat adhesion is the casing's ability to bond to the product surface. Standard, HA (high adhesion), HA+ and VHA (very high adhesion) grades are available.
Jelly pockets and water pockets under the casing are an adhesion problem before they are a recipe problem. Free moisture in a chicken emulsion migrates outward during cooking; if the casing is not bonded to the surface, it collects in the gap and sets as jelly on chilling. Bond the casing to the product with a higher adhesion grade and there is no gap for it to collect in.

Halal, Certification and Documentation
A large share of India's poultry processing industry is halal-certified, and buyers increasingly ask for casing-level certification rather than accepting a plant-level declaration. Casing-level halal certification is available and should be requested at enquiry stage, not after the first shipment.
The documentation set a serious poultry processor should expect from a casing supplier includes GFSI-recognized food safety certification, ISO 9001, Kosher and Halal certificates, and EU/US food-contact compliance statements. If an exporter or private-label customer audits you, these are the documents they will ask to see.
Running a Line Trial Before You Commit
Poultry emulsions vary more between plants than red meat emulsions do — added water, protein source, phosphate level, chopping temperature and cooling profile all differ. Two plants making chicken sausage can need different casing specifications.
The only reliable way to fix specification is a trial on your own line with your actual formulation. A structured trial looks like this:
- Define the product, target caliber, target yield and the defect you are trying to eliminate.
- Request samples in two adjacent specifications — for example two shrink levels, or two adhesion grades — so the trial produces a comparison, not a single data point.
- Run each specification on a normal production batch, not a small hand-stuffed test, so stuffing pressure and cook profile are representative.
- Record cook yield, chill yield, surface appearance after 24 and 72 hours, purge in the pack, and slice quality.
- Lock the specification that wins and record it on your purchase specification sheet so repeat orders are identical.
Storage and Handling on an Indian Site
Heat and humidity change casing behaviour, and most casing complaints in India that are blamed on quality are storage problems.
- Store casings in original sealed packaging in a cool, dry area, away from direct sunlight and away from the cooking hall.
- Do not store casings on the floor or against external walls.
- Bring casings to line temperature before use rather than moving them straight from a cold store to a hot stuffing area.
- Follow the supplier's soaking instructions exactly where soaking is specified — over-soaking is as damaging as under-soaking.
- Rotate stock strictly by batch date, and reseal opened cartons.
